Yes your insurance would be invalid.

If you are changing the classification of the vehicle, the DVLA must be informed, and your insurance too. If you are simply modifying the vehicle, then only your insurance must be informed.

The law regarding converting is actually quite complicated and can alter the taxation class to the strange classification of PLGV (Private Large Goods Vehicle), it also effects the speed limit of the vehicle and laws relating to construction and use.
